Vous pouvez de temps à autre la désinfectez avec une eau légèrement enrichie avec de l’eau de javel (5ml pour 500ml d’eau). Attention cependant à très bien rincer la planche car l’eau de javel n’est pas un produit alimentaire.

Il est aussi important de garder votre planche dans de bonnes conditions d’utilisation avec un petit coup d’huile plusieurs fois par an.
L’huile protège le bois de l’humidité, de la décoloration et des fissures. Elle améliore aussi la longévité et la beauté du bois.
L’huile d’amande ou de pépins de raisin constitue un bon choix (attention aux allergies aux fruits à coque). N’utilisez pas d’huile d’olive, elle rend la planche collante et sale ; ce serait dommage !

Spécialement pour les billots en bois : Le grattoir est un outil indispensable dans la vie d’un billot. Après chaque utilisation un billot doit être gratté pour enlever les impuretés et maintenir son aspect lisse et sain. C’est ce bon grattage qui va creuser les billots de boucher.

Gardez vos couteaux aiguisés. Des couteaux émoussés ou cassants signifient que vous devez presser plus fort pour couper, ce qui marquera votre planche.
